Easy Shredded Chicken Breast Recipe

I’m a fan of simple and easy meal prep recipes. I am so busy with meetings that having something in the fridge almost ready to go is a lifesaver otherwise, I just won’t eat. My husband eats a lot of protein so I needed to figure out how we could have some sort of protein in the fridge for both of us that would allow us to add variety throughout the week.

We thought getting a rotisserie chicken from the store would be great but time after time and store after store, we realized they just are not that good. So I decided to figure out how I could make some shredded chicken breast without sitting there for 20 minutes shredding it by hand and realized I could use my KitchenAid Stand Mixer. This easy method takes 20 minutes to cook and 20 seconds to shred so count me in!

First, grab your stainless steel pan(I love this set by Tramontina), and heat it up. Always heat your stainless steel pans on medium and don’t add anything until you drop some water on it and the waters turn into beads and dance across the pan. While this is heating up, grab your chicken breast and season it on one side with garlic, salt, and pepper. If I’m feeling fancy, I’ll add rosemary as well. Next, check to make sure your pan is ready to go and pour some olive oil to coat the base of the pan. Let the olive oil heat up for about 30 seconds then transfer your chicken to the pan, seasoned side down. Season the top of the chicken while its in the pan. Let it cook for about 5-7 minutes and then flip over, add 1 cup of chicken stock/broth, cover with the lid and let it cook for about 9-12 minutes depending on how well you like your chicken cooked.

Once it’s fully cooked, grab your tongs and throw those bad boys into your KitchenAid Mixer bowl, lock it into place and use the paddle attachment with the lines through it. Always lock your Stand Mixer head so you don’t have to worry about food flying everywhere. Set it to level 2 and watch it gently shred your chicken in about 20 seconds (sometimes even less!).

Voila! Shredded chicken at home that you can use to toss into a salad, make a casserole with or my personal favorite, enchiladas!

Ingredients:

Chicken Breast (1-2lbs depending on how many people you’re feeding, it makes a lot!)

Chicken Broth (1 cup)

Salt

Pepper

Garlic

(Any other spice or herb you like)

Recipe:

  1. Heat up your stainless steel pan. While it’s heating, season the top side of your chicken with your spices and herbs.

  2. Add olive oil to the pan and let it heat up for 30 seconds.

  3. Lay chicken seasoned side down on the pan and let it cook for 5-7 minutes. Add seasoning to the exposed chicken.

  4. Flip the chicken over, add the chicken broth and place the lid on the pan.

  5. Let cook for 9-12 minutes.

  6. Remove chicken from pan and add into your KitchenAid Mixer Bowl. Lock bowl into place and attach paddle to mixer head.

  7. Lock mixer head and gently turn on your mixer to level 2. Let it shred for 20 seconds.

  8. Enjoy! (It can usually last in your fridge for up to 5 days so you have plenty of time to enjoy it).
